
Every once in a while 2 things happen. First, I clean out my pantry. Second, I make something with the items that I need to either use or toss. Its not often, however, that the pantry concoction turns into something I would want to recreate again and again. This pantry cleaning day, an exception was made.
Digging through the shelves I found half a box of Rice Krispie cereal, we had most of a bag of marshmallows (potty training treats, obvi), half a sleeve of graham crackers and chocolate chips left over from Christmas baking. I couldn’t NOT make rice krispie treats, and as you will soon discover about me, I do not do PLAIN desserts. I’ve been told that I’ve “gilded the lily” on many occasions and I take that as a compliment and encouragement to keep gilding! So of course I attempted to make these treats into s’mores!

I followed the recipe on the box, adjusting for the amount of ingredients that I had. I added crushed graham crackers and chocolate to the cereal, and when I mixed it together with the melty, buttery marshmallows the chocolate melted a bit and it was beautiful. Then I noticed I had a few more marshmallows. I could have saved them for more potty training treats, but I like to keep my kid on his toes when it comes to getting rewards, so I decided to use them for my treats instead! Once the rice krispy treats cooled and settled in the pan, I topped them with the rest of the marshmallows AND PUT THEM UNDER THE BROILER. The lily was officially gilded. And there was no going back. These are heavenly. These are perfection and you will never want a rice krispie treat without chocolate, grahams, and toasted marshmallows again.
S’More Krispies
Ingredients:
- 4 cups rice cereal
- 1 cup crushed graham cracker pieces (not too small…you want CHUNKS)
- 5 cups marshmallows, divided
- 1/4 cup butter (1/2 stick)
- 1 cup bittersweet chocolate chips
Steps:
- Combine cereal, graham crackers, and chocolate chips.
- Melt the butter over medium-low heat. Then stir in 4 cups of the marshmallows. Heat and stir until they are melty and smooth.
- Take the marshmallow/butter mixture off the heat and quickly stir in the cereal/crackers/chocolate. Make sure everything is combined, and let the chocolate chips melt a bit.
- Transfer the mix to a 13×9 pan, greased with cooking spray or butter, and mash in place. It helps to have wet hands for this part…it keeps the stickiness at bay.
- Let the treats set for about 30 minutes.
- Once they are set, top with the rest of the marshmallows (about 1 cup, or the rest of the bag). Spread them out in a single layer.
- Stick under the broiler and WATCH. This will only take 1ish minutes, depending on how toasty you like your marshmallows.
- Once the marshmallows are cooled, cut and serve!
